Celery – A Herbaceous Plant

· Use in raw in fresh juice
Celery cleanses the blood; from a nutritional standpoint it does not stand out. But the active substances that it contains make it useful in the following cases:
· Celery helps with Water retention, kidney stones, gout, uric acid, arthritis thanks to the remarkable diuretic effect of its essential oil.
· Celery acts as a alkalizer because of its alkalizing mineral salts. It neutralizes excess blood acid and facilitates the urinary elimination of metabolic acids.
· Celery has a positive effect on Hypertension, cholesterol, Diabetes and Psoriasis.

Some suggestions for using Celery in your cooking
Vegetable Broth
1 teaspoon olive oil
2 medium onions, quartered
2 medium carrots, chopped
2 garlic cloves, unpeeled and crushed
8 cups of water
1/3 cup coarsely chopped parsley
1 bay leaf
1 teaspoon salt
Directions:
· In a large stockpot heat the oil over medium heat. Add the onions, carrots, celery, and garlic. Cover and cook until softened, for about 10 minutes.
Add the rest of the ingredients, bring to boil and then reduce heat to a simmer and cook for about an hour.
· Strain through a fine mesh sieve into a large bowl or pot pressing against the solids with the back of a spoon to release all the liquid.
· Discard the solids.
· Use right away or place in containers for future use and refrigerate or freeze for long term storage.
Cook’s note: Use your Vegetable broth for Chicken noodle soup, broth to drink.
Or use it to as the liquid cook rice, or any grain. Very good and adds nutrition to your dish.
CELERY JUICE
Wash celery and put through vegetable juicer. Some of the leaves can be used, but they are bitter, so do not use many.
This drink is especially helpful to those who do not sleep well, get up tired, and always have a fatigued feeling, along with extreme nervousness. (Raw leaf lettuce salad will also help to induce sound slumber.)
KIDNEY CLEANSER
There is probably no other fruit or vegetable that has the curative properties of the tomato. In the short space of the last few years tomato juice has become one of America's most popular drinks.
Many delicious drinks can be made by blending tomato juice with the juices of other vegetables.
The Kidney cleanser is made by blending the juice of two or three stalks of celery with a glass of tomato juice. (Asparagus and radish juices may also be added or substituted to give the same effect.)
BLOOD-BUILDER
The juice of several handfuls of fresh, crisp spinach, two or three leaves of lettuce, and a handful of parsley may be blended with tomato juice. {9SC1-12: 22.1.8}
GALL BLADDER CORRECTIVE
This appetizer is made of the juice of tender rhubarb and fresh young asparagus, with a sufficient amount of grapefruit juice added to prevent the rhubarb from stinging.

· Whole grains, Baley, Rye, Bulgur Wheat, Rice, Quinoa, etc.
· Healthy Stir Fry
Add healthy fat such as olive oil, avocado or avocado oil, coconut oil, Flax seed oil. Add fresh squeezed lemon juice and enjoy.
